Intimate, elegant and perfectly balanced
With a mere sixteen chairs, Haebel is one of the smallest fine-dining restaurants in Hamburg. Owner Fabio Haebel and head chef Kevin Bürmann both believe in local, organic vegetables, game and line-caught fish, and the concept is communicated by equally dedicated front-of-house staff. Diners can choose between two carte blanche-menus: Fauna, and the vegetarian Flora, paired with sustainable wines or non-alcoholic drinks, often made from off-cuts. A low-key but sophisticated dining experience.
