Vegetable warriors
You may already be familiar with the original version of this ultra-ultra sustainable restaurant in Stockholm. The Tallinn sibling, situated on the 6th floor of the museum, with stunning views wherever you look, is just as scrupulous when it comes to re- and upcycling its cast-offs for dishes or cocktails, in a way that would make Silo proud – and continues to impress us and other, sustainable eat guides alike. Gerli Travkin’s predominantly green cooking is creative and fun – and heavily influenced by the ever-changing surroundings.
