Aesthetic, nature-driven cusine
The name Foer comes from Foerageren, meaning “foraging,” and it’s as good a mission statement as any. This raises expectations, of course, and they were fulfilled during our visit. Here, there’s respect for the ingredients with a display of impressive creativity and playfulness. Fermentation, drying, smoking, and different types of pickling add depth to cooking. At Foer, guests are offered two menus: “Flora” and “Fauna” — both menus are plant-based, but while “Flora” is completely vegetarian, “Fauna” includes a selection of fish and meat. Both are highly recommended.
