You open the iron door and walk through a dungeon-like corridor, before Heinz Gindullis’ culinary microcosmos unfolds, inhabited by an international kitchen team striving to raise its sustainability standards. It’s a job that includes collaborations with local, organic farmers, recycling and using green energy only. The dishes, bold and expertly crafted, are best experienced through the seven-course vegan/vegetarian Electric Bloom menu, but possible to try à la carte too.
