A burst of colour
Fun dishes based on seasonal produce, resting on a Mediterranean foundation, albeit with a colourful, Latin twist – such is the noble aim of Antwerp restaurant Briquet. The food, be it pillowy gnocchi with chanterelles or pork cheeks and pickles, is ideal for sharing, pleasing to look at and bursting with flavour. This is the sister restaurant of Soixante with a similar mission – to work in close connection with small, local growers, favouring high-quality vegetables that are flanked by sustainable fish and meat.
Sustainability highlights
- Lots of in-house-made beverages
- Fermentation is used to prolong seasonal produce and avoid food waste
- Nearly all fresh ingredients are used the day they were purchased
- All vegetables, fruit, berries, etc., are locally sourced and from small-scale suppliers
