Brikz
A joy and curiosity that’s contagious
In an old jazz café in Charlottenburg, Arne Anker runs the small, intimate restaurant Brikz, offering both a tasting menu and à la carte. The name comes from the red brick that adorns the walls inside the dining room. Brikz has a family atmosphere; many of the staff come from well-known star restaurants, and when given the opportunity to open their own restaurant, they created their own values based on democracy, respect, and work-life balance. The food is seasonal, and the menu changes as new ingredients become available.
Summary:
• Close relationships with farmers, growers, and fishermen
• Seasons control the menu
• A philosophy of low food waste
• Strong focus on staff well-being
