Wine and food in perfect harmony
Fabian Fischer sets a high standard in the dining room—his approach is low-key, yet deeply engaged and impressively knowledgeable about wine, particularly from Germany, Austria, and France. Though known for his fondness for Riesling, we were recommended other grape varieties—and them too were spot on. The cuisine is both creative and visually striking, yet always driven by flavor, with acidity and sweetness playing a prominent role in many of the dishes.
