Brabo

Fire, fire, fire!
Like many other restaurants in the 360°Eat Guide, Brabo is driven by a passion for honesty and sincerity — and the whole idea is based on close relationships with farmers and suppliers that share the same drive and agenda. Brabo calls itself a “grill restaurant without pretensions,” — but we don’t agree with that at all. On the contrary; here, there are high standards for everything that ends up on the plate. The Cal Pauet meat — from an organic farm with a good reputation — is exceptional. The vegetables are local and seasonal. And all the charcuterie is made in-house; according to the owners, this is a good way to increase both quality and awareness among guests — as well as reduce food waste!
Summary:
• About 80 percent organic
• Focus on smaller, local producers
• Low wastage — highly knowledgeable in using every piece of raw ingredients
