Small steps in the right direction
Far out on the Kopli peninsula, in an old factory area with a high amount of industrial hip factor, lies Barbarea. It started as a bakery and then grew into an ambitious restaurant. The bakery is still operating and today contributes to the overall gastronomic experience. When the bakery closes at 3pm, the restaurant begins preparations to open. Barbarea is taking small steps towards a more sustainable business. The wine list is made up of natural wines from growers with whom they have a personal relationship, and the ingredients are mostly local, although principles are sometimes compromised. The underlying concept is of “sharing” a simple, straightforward, taste-driven gastronomy.
