What was originally conceived as a pop-up in the Het Veem warehouse at the old timber port in western Amsterdam is now, after 10 years, a permanently established restaurant location in Amsterdam. Chef Benny Blisto has a preference for local, sustainable producers — whether it’s for meat, fish, or vegetables. The day’s selection of ingredients dictates the menu parameters for the chefs, who then create dishes characterized by sensuality, creativity, and respect for the ingredients. Natural wines, preferably from Jura or Italy, or homemade cold brew teas, kombuchas, and juices are poured into the glass. Ask for a table at the back of the room, which is the best place to watch the chefs in action.
