In London’s, and possibly Britain’s, most fancy neighbourhood lies an oasis for sustainable, hyper seasonal food, favouring local, small-scale farmers using regenerative methods. The wines, too, are bought from growers who work with biodiversity – and Britain – in mind. Chef and owner Chantelle Nicholson has a rare ability to make rockstars out of vegetables, bringing each ingredient to its full potential, while working in a low-waste manner and making sure the staff is paid and treated fairly. An evening to remember, with a clear conscience.
