Every choice counts
At âme, sustainability is shaped by precision. Rice is off the menu due to its water use, sugarcane swapped for local beet. Organic waste is portioned to avoid leftovers, and delivery crates returned for reuse. Almost all produce is local, wines strictly Spanish or French. Behind the scenes, every staff member is cross-trained to grow together – and every guest gets the full story of the dishes. It’s thoughtful, refined, and quietly radical.
