Alberte
Wholehearted cooking
Phil Dewulf, formerly of Volta and De Vitrine, describes his restaurant Alberte as “casual” and “laid back,” which we think is an apt label for this familiar, homey, and creative restaurant in Dampoort. The menu is innovative, almost daring, with some mind-blowing flavor combinations and textures. It invites both pleasure and reflection. This is both finger-licking good and responsible, as well as both fun and serious. There is great respect for the farmers and growers, yet it’s not the certifications that matter the most but the relationships and understanding of the ingredients.
Summary:
• Works closely with the farmers and growers
• Innovates in a playful and creative way
• Challenges suppliers not to use plastic
