How did you come about to open O Secadeiro?
–It is a family project that Eva, my partner, and I work on. It’s a life project in which we want to change our lifestyles and opt for a life that’s more respectful of the environment, our surroundings, and ourselves. We want to create a healthy work environment where we can enjoy everyday life, without the stress of big cities.
From where do you source your produce?
–We have our own garden, from which we source much of the produce used in the restaurant. at certain times of the year, produces nearly 80% of the produce we consume in the restaurant. We believe in reducing the amount of waste generated, which is why we recycle as much waste as possible and make our own compost with organic waste, which we then use to fertilize our garden.
And when not supplied byyour own garden?
–At O Secadeiro, we work with small, local producers, with whom we have a very close relationship. The idea is to be promoting a circular economy that benefits our environment.
