Lyst is shaped by a hands-on approach and a deep respect for those who grow, catch and harvest. Led by chef Daniel McBurnie, the menu changes weekly, guided by close conversations with local producers and what nature allows at that moment. Vegetables come largely from biodynamic gardens, seafood is line-caught and used in full, and meat appears rarely, always wild and handled nose to tail. The experience feels precise, personal and firmly rooted in place.
