Nature reinvented
The rhythm of nature dictates the rules at Bruut, which name alludes to the Bruges territory. Food is served through a set nine-course menu only; at lunchtime it’s somewhat shorter, the goal being to reflect the current season while keeping food waste to a minimum. The restaurant resides in a charming brick house from the seventeenth century, where the ultra-creative chef Bruno Timperman delivers one little masterpiece after another, based on ingredients he has often foraged himself.
