From the quirky, blue tiles on the façade to the menu’s daring compositions like lobster on a waffle, a dinner at Elders is a cornucopia of visual and sensory surprises. Head chef Tom Pauwelyn has a knack for vegetables, namely those that are local and organic, allowing for the seasons to determine the dishes. The interior may be sparsely decorated and dimly lit but come summertime, the hip crowds of Ghent gather around the café tables in the backyard for a glass of vin nature.
