Tom Fluit cooks in a quietly luxurious way: excellent produce, little fuss and plenty of respect for what is actually on the plate. His partner Ilse De Backer runs the room and wine side, with a serious leaning towards natural and biodynamic bottles. A polished operation that never feels overly polished.
