Nathan Van Echelpoel has found a neat sweet spot between classical French-Belgian cooking and a more playful Asian sensibility. The food is precise without becoming stiff, while partner Eva Van de Peer gives the restaurant much of its warmth and polish. A very personal two-person operation, rather than a chef working in isolation.
