Close to the farm, close to the heart
In Destelbergen, just outside Ghent, Bruun works closely with nearby organic farms and small producers to shape its menu. Vegetables and fruit come from Plukboerderij Grondig, where crops and harvests are planned together with the farmers. Meat is sourced from Vierklaver in Lokeren and most seafood from North Sea supplier Jacques Jean. Beverages lean organic, coffee is roasted by the family-run Wilmotte and even the spent grounds return to the farm’s flower garden. A fixed menu, careful planning and a solar-powered building reflect a broader commitment to low waste and lasting relationships.
