Ingredients are low-impact and sourced exclusively from within the Netherlands, paired with a carefully chosen list of natural wines from across Europe. The menu celebrates greens, legumes, herbs, and seaweed—seasoned with care and touched by wood fire. Alongside contributions from independent foragers, the team itself embodies the restaurant’s values: everyone involved, every opinion respected, each voice carrying equal weight.
