Foer invites guests to choose between two carefully designed menus: Flora – entirely plant-based – and Fauna, which includes sustainable fish and whole-animal proteins sourced directly from farmers and fishers. Events highlight these producers, giving guests insight into the invisible effort behind every dish. On the terrace, most of the herbs and flowers are homegrown, joined by a small dune planted with native species to support biodiversity. Low-intervention wines, botanical soft drinks, and foraged pairings complete an experience meant to linger beyond a single evening.
