“Sukaldea“
Bar Manojo sits just a few blocks from the Urumea River in the laid-back Gros district — and that easygoing vibes carries into the restaurant itself. Behind the bar, a stack of colorful wine labels hints at the style: mostly natural, mostly Spanish, though not by strict definition. The list is short, curated more by taste than trend. Chef Marco, originally from Sardinia, brings a menu — written daily on a chalkboard — that’s rooted in Basque cuisine but leans brighter, with more citrus, more acidity, and the occasional nod to Parisian bistronomy.
