Tucked into the Basque mountains, ARREA! isn’t just a destination – it’s the heartbeat of a rural revival. With chef Edorta Lamo at the helm, this small village restaurant has become a movement. Almost all of their ingredients come from within 20 kilometres – from native herbs to produce grown just outside the kitchen door. The team is made up almost entirely of locals, and new businesses have sprung up in their wake. This is nature-driven cooking, aesthetical plating, with every ingredient given its own moment to shine.
