In an area abuzz with theatrical noise, Adam Handling has made it his mission to showcase fewer and better ingredients such as local truffles or hand-dived scallops. As the chef himself has put it: “I really want the true flavours of this British produce to sing.” The tasting menu is beautifully crafted and somewhat theatrically presented, however, the philosophy behind the restaurant is strictly ecological. This includes everything from keeping the staff healthy and food waste to a minimum, while nurturing relationships with local farmers and fishermen.
