The crown jewel of Tommy Bank’s empire shows how to produce an exceptional dining experience in tune with the surroundings. Although simplistic on the surface, the tasting menu hides a universe of flavours developed through ancient techniques such as fermenting and prolonged ageing. The 16th century, former inn also hosts a few guest rooms and a farm, complete with cattle and vegetables, adding up to a low-intervention yet work-intense venture – the staff consists of 140 people, each contributing to the village’s echo system. Exemplary!
