At this sleek yet innovative restaurant, sustainability is more than a promise – it’s the heart and soul of the venture. A stone’s throw away lies the restaurant’s own farm, where herbs, fruits, vegetables and mushrooms flourish alongside a small but growing herd of animals. Farming practices are completely in synch with the surroundings, as are the practices in the kitchen, where the Asian-influenced tasting menu changes on a daily basis and the art of composting is taught to staff and wide-eyed, culinary students alike.
