A force of nature
From the curvaceous wooden tables to the raw tableware, co-created by one of the three owners – St. Barts is a place where nature reigns. The all-British, zero-waste tasting menu begins modestly with raw and cured dishes, ending in an open-flame grilled crescendo. A similarly holistic approach applies to sustainability, with countless initiatives being implemented behind the scenes. If, for example, meat is served, rest assured it’s there for a good reason; like the invasive Chinese water deer collected from a nearby game keeper.
