Founded by Lara Espírito Santo and George McLeod, SEM Restaurant is built on a shared belief that sustainability must be lived, not stated. Working exclusively with organic, agroecological and regenerative producers, the menu adapts weekly to what nature provides. Invasive species, heritage crops and climate realities shape the cooking, while long-term partnerships replace supply chains. Thoughtful, radical and quietly impressive.
