From garden to plate
Chef Simeon Nikolov has his own farm—a vibrant, generous, and well-tended pantry of seasonal vegetables that travel straight from the soil to the kitchen and onto the guests’ plates. What can’t be enjoyed immediately is preserved and brought out during the darker seasons. His cooking is technically refined, aesthetically driven, and entirely focused on plant-based ingredients.
