During short time, this new restaurant has achieved top placements on various heavyweight lists and guides. Here, it’s classic fine dining: beautiful, flavor-driven, and produce-oriented. Through their three own farms – two on land and one at sea – Signum aims to control and follow how the quality of their produce evolves. A nearby hydroponic indoor farm provides the kitchen with herbs, flowers, salad, kale, sorrel, and rapeseed leaves. Front of house or kitchen?
