In close relationship with the farmers
Restaurants that are clear and transparent about the farmers and producers they work with are always more interesting than the ones that are secretive or simply don’t care. Savage lists their farmers right on their website and often highlights them on social media. This is a vibrant and lively restaurant with a creative kitchen, serving simple yet sophisticated dishes. Plant-based cuisine is the starting point, but you can also add both meat and fish. The wine list mainly features natural wines, preferably from Belgium or at least Europe. Any leftover food is collected by bicycle couriers under the auspices of Recyclo and then composted into organic manure that is spread on the local fields around Brussels.
