In a class of its own
It is hard to find restaurants that so seamlessly and authentically elevate sustainability as a driving force, a raison d’être, without feeling pretentious. The level of knowledge and commitment is unmistakable. On their website you can read: “The restaurant is vegetable based, and ingredients are primarily harvested in our own garden and farm. Of course, no pesticides or similar techniques are used, and we avoid F1 hybrids so that only open-pollinated plants are used in our garden. We strongly support organic and biodynamic farming, but we wish to go far beyond.” Moment not only offers innovative, ingredient-driven cuisine but also leaves us guests with a message that feels both humble and relevant.
