Portal has become an upgraded neighborhood restaurant with plenty of regulars and reliable menu options. But don’t be fooled by the suggestion of a weekday rut. There is substantial knowledge in the kitchen, and nothing is left to chance regarding caring for and developing relations with producers and suppliers. In their well-written handbook, the staff can expect to find answers on everything from produce to interior, vacation, working hours, ceramics, cutlery, alcohol policy, and even the art on the walls. Regarding interns, the restaurant only receives students from cooking schools, where they receive a salary for working outside school hours. No free labor is allowed in the kitchen. Moreover, a large team enables the flexibility to adjust work around one’s private life. We give them additional praise for their work on reducing food waste, where they’ve created a system of transparency around everything they throw out.
