Palace
Established in 1952, Palace is an institution of Finnish gastronomy. This was the first restaurant in Finland to receive a Guide Michelin star in 1987, and today, they stand alone in having two stars in the red guide. In 2022, it’s time for Palace to debut in the 360°Eat Guide. They may keep a low profile on their sustainability, but behind the scenes, they work systematically with the quality of the produce and their staff development. At this latitude, there is a constant quest for produce – seasons are short and unreliable, and few producers can offer the right quality. Palace uses nature to fill its pantry, from forests, nearby fields, and the ocean. Sometimes, to deliver on a two-star level, compromises must be made with the product’s origin. But in our eyes, the less you need to do that, the better.
