During a year’s time, Moment has been exclusively using greens and dairy from local suppliers; flowers, herbs, and mushrooms from nearby. In terms of vegetables, the restaurant is fully self-sufficient thanks to their farm, which provides the kitchen with what they need.
Moment is a plant-based restaurant. The drinks follow the same line: transparency and purity. The farmers and their terroir, maybe even their mood and state of mind, should be apparent in the glass. Moment is a circular restaurant that doesn’t seem to skimp with anything: the building itself is compostable, made solely from compostable materials. The uniforms and linens are made from upcycled fabrics, and their furniture is made with wood from outside Aarhus, about 30 kilometers away. Gastronomically they display creativity and craftsmanship at a high level. It’s beautiful, sensory, flavorful, and challenging.
