Mielcke & Hurtigkarl is an odd bird on Copenhagen’s restaurant scene; this is a kitchen that goes it’s own way and lives by a conviction that local produce is superior in both sustainability and flavor. In fact; this is how Mielcke Hurtigkarl has worked all along – before the new nordic cuisine became a worldwide-known concept. At this restaurant the heart beats for the wild; both in terms of meat, fish and vegetables. The venue is spectacular and reflects the gastronomy in an excellent way. Jacob Mielcke and his team have a healthy, skeptical attitude towards certifications, and do not want to brag about their sustainability work. Instead, they rely entirely on the food and drink to do the job.
