Matildas

Couple Johan and Frida Flodman are two odd birds in this part of Sweden. Their bistro Matildas is not just an architectural sight in itself, designed by acclaimed architect Thomas Sandell, but it also has great gastronomical ambitions. The dishes may be simple and rustic, but the produce maintains a quality far above average for restaurants north of Stockholm, with few exceptions. The hunt for produce is even more challenging so far up north, but Johan and Frida both have KRAV-certified producers in Ockelbo alongside a large network of growers and farmers. At this latitude, the produce dictates the terms, not the chefs.
