Daniel McBurnie sets the bar high. His life’s work, the acclaimed Lyst restaurant located on an artificial island in Vejle’s harbor, is a restaurant that doesn’t want to highlight individual chefs or dishes, but rather strikes a blow for the overall experience. Here, we eat some of the year’s best dishes, all categories. It is a sensual, ingenious gastronomy, beautifully presented, often with a purpose and a thought behind it. There is a lot going on during the evening, but the front of house makes sure to accompany you with stories behind the dishes and lessons about what you eat and drink.
