Delightfully ambiguous
The world of ITA bistro revolves around a wood-fired oven, and so does the food. The dishes are small and ideal to share, and although they have a south American vibe to them, you can forget your charred cuts of meat. Instead, the delicate aesthetics are bordering on the Japanese. On the sustainability front, this kitchen takes zero-waste seriously: every leftover ingredient finds a new, thoughtful purpose. At night, even the oven’s residual heat is put to work, gently slow-cooking dishes until morning.
Sustainability highlights
