They have only been around for six months but are already an established restaurant in Gothenburg. The reason could be that while waiting for a new restaurant space, Bar Bulot opened up a pop-up, which became so successful it’s now permanent. Bulot is a French-inspired restaurant driven to serve gastronomy in an unassuming space. Local Swedish produce is the priority, using both certified producers alongside smaller ones who can’t find the time or resources to be certified. The organization has a flat hierarchy with regular meetings to ensure the staff is onward for the ride, and zero-tolerance against discrimination and other offensive behavior is a matter of course.
