Animo means soul in Esperanto. This could be reflective of their role-model restaurant Esperanto, which used to be across the street, or perhaps to highlight the importance of having an inner direction in terms of gastronomy. For them, it’s about building close relationships with the producers in their nearby surroundings. Game from Strängnäs, birds from Vikingfågel in Munka-Ljungby, along with rhubarb and nettles from their own garden. It’s more important that it’s local than organic. And before all other things, the flavor comes first!
