All together now
Some restaurants are difficult to label or put in a box. Album is one such restaurant, which is absolutely intentional. Here, local ingredients are combined with imported ones, and European influences merge with Asian flavors. The common thread is not particularly sustainability, origin, or gastronomic style, but rather taste and quality. It’s innovative, stylish, and delicious!
Sustainability highlights
- Listens to suppliers and relies on their knowledge
- Doesn’t always view local ingredients as better than imported ones in terms of conditions
- Approaches sustainability in a very low-key way and doesn’t actively promote it
- Provides staff with opportunities to develop their own careers and come up with new initiatives for the restaurant
- Minimizes food waste and unused wine by planning for exact amounts of guests
