The Britannia Hotel, which also hosts Speilsalen, has a general focus on sustainability and reducing food waste. It is reflected in the gorgeous restaurant – the staff knows their ingredients, down to the origin of the fermented seaweed. As you can expect from a high-end restaurant, flavors and techniques are both original and impressive. The same applies to the wine list, which has been put together by one of Norway’s most acclaimed sommeliers.
