At the small and ambitious neighborhood, restaurant Matildas in Gävle, balance reigns in every respect. The menu is laced with seasonal greens, elk and small game. They are dedicated fans of small producers, including beverage producers. The juice is made from the restaurant’s own fruits and vegetables; the wine is predominantly natural, and the homebrew beer accounts for 90 percent of sales.
