Ichi serves up its’ own take on Nordic/Japanese cuisine. The menu is called Yoshoku and varies according to availability and season. The food is always well composed, beautiful, and tasty. At this restaurant, it’s essential to take care of things and throw away as little as possible. This, of course, goes for the ingredients, but also for the working apparel which – if needed – gets mended by the restaurateurs’ mother instead of thrown away. Right now, there is a project revolving around kintsugi, the art of repairing broken plates.
