In Svalbard, in the northernmost part of Norway, logistics are almost as challenging as trying to stick to local produce. Still, the staff behind Huset manages to serve a delightful and sustainable meal, comprising reindeer served in nose-to-tail fashion, with salad and microgreens from the restaurant’s own, indoor cultivation.
