“Ein” is the Norwegian word for “juniper,” and Einer in Oslo has an obvious penchant for the woods. The restaurant has only been around since 2018, but it’s already gained a reputation for serving underrated ingredients, such as a forest mushroom called Skarlagen Vårberger. The menu is primarily based on local, sustainable produce, with particular attention paid to reducing food waste.
