What requirements do you have for the fish and seafood you use at the restaurant?
We choose only fish according to the Marine Conservation Society guideline.- We prefer wild-caught fish and use only MSC certified and/or organic fish. We use the entire fish in our cooking.
What requirements do you have for the meat you serve at the restaurant?
– In general, we try to limit our use of meat. We source only grass-fed, natural-fed, and/or pasture-raised animals. Animal welfare is of the utmost importance to us, and we always source from within a very short distance

The wine list include a wide range of organic and biodynamic wines, local beers, coffee from fairtrade – non-alcoholic beverages are made using locally foraged products
